This wine is made from the harvest of the San Donato winery located at 395 m above sea level – one of the highest Vernaccia wineries in Tuscany, by the medieval city of San Gimignano.

After harvesting, the grapes are sorted and only the best bunches go to press. The fermentation process takes place in steel and cement containers at controlled temperature and the ageing process is carried out partially in steel containers and partially in concrete containers. Bentonite is used for clearing the wine.
The wine has light yellow bright colour. The overall impression is fresh, strongly mineral, salty. Suitable with appetisers, salads, oily fish. The wine is produced with organic farming and biodynamic methods.
